Lentil, feta, apple and mint salad

Serves 4

250g green or brown lentils I big onion 2 tomatoes 1 apple 200g Feta cheese Handful of fresh mint Dressing: I tablespoon of Lemon juice Olive oil Salt and pepper to taste

Clean lentils, for sand and bad ones then boil them til soft - roughly 30 minutes then drain. Wait until they have cooled down. Dice onion small and chop up tomato and mint and add to lentils - add as much feta cheese as you wish. Add some sliced apple for garnish. Pour the dressing on and serve.

Mango, Coconut and Baobab sorbet

6 pax 2 mangoes 100g Caster sugar ½ cup of coconut milk 1 teaspoon gelatin 1 tablespoon Baobab powder Peel mangoes, cut into pieces and put in blender until smooth. Add everything else to the mix. Pour into a bowl and freeze! So easy. Ready to eat in 4 hours (depending if you're running on a generator or solar).
